Chocolate Zucchini Cake

This is my go-to dish whenever I’m asked to bring a dessert. I freeze shredded zucchini in 2-cup portions for winter use.

½ cup butter

½ cup oil

1 ¾ cups sugar

2 eggs

½ cup cocoa

1 teaspoon baking soda

½ teaspoon baking powder

½ teaspoon salt

½ cup sour milk

2 ½ cups flour

2 cups shredded zucchini

1 teaspoon vanilla

Cream together butter, oil and sugar. Beat in everything else in order listed.

Pour into prepared 9 x 13 pan.

Mix topping: ½ cup semi-sweet chocolate chips, 1/2 cup brown sugar, ½ cup chopped nuts. Sprinkle on top of batter in pan.

Bake at 350 degrees until done, 30 – 40 minutes.
